Peanut Protein Butter Cups
These super simple 3 ingredient Peanut Protein Butter Cups are the dream! They're easy to make with just 3 ingredients and are devoured in just as many seconds once they're set.
I've made them using Pic's Peanut Butter as this is my go to favourite at the moment. I love that it's low GI and has no added sugar or oils. The protein powder I've used is Whey Box's Chocolate flavour, it's delicious and super handy for baking since they come in small sachets in lots of delicious flavours. You can of course make them with no protein powder if you're not looking for that extra dollop of protein - they're still just as tasty!
1 Jar Smooth Pic's Peanut Butter
1 Slab of good quality dark chocolate
1 Sachet Whey Box Chocolate Protein
To start, you'll need a muffin tray filled with cupcake cases. Fill the tray with a case in each hole, then begin to fill each with a generous spoonful of peanut butter.
Leave these to one side to settle, so the the peanut butter evenly covers the base of the cases. Then, begin melting your chocolate on a very low heat - you can do this in the microwave, but I always prefer using the hob. As soon as it reaches a creamy consistency, turn the hob off and stir in the sachet of Whey Box Chocolate protein powder (or whichever you're using).
Once the chocolate is melted and the protein powder has been stirred in until smooth, begin spooning it one by one into the cases on top of the peanut butter.
Cases filled, it's time to put them in the freezer to set for around 1 hour. Remove them from the freezer around 30 minutes before eating, taking the casing off whilst they're still frozen and then leaving to defrost for around half an hour. The calories are a little high on these since they're predominantly calorie dense ingredients and I made quite large cups too. [370kcal, 15g Protein, 20g Carbs, 26g Fat].
